There’s no question that when it comes to food, homemade is always better. I find this is especially true when it comes to baked goods and desserts. Seriously, I dare you find a packaged dessert that’s better than a chocolate chip cookie, fresh from the oven. Better yet, have you ever tried a homemade chocolate chip cookie ice cream sandwich? It will change your life!
Freshly-baked chocolate chip cookies are a delicious treat, but I don’t like to have them around the house very often. (On the other hand, bring on the healthy fruit nachos!) The issue with chocolate chip cookies is actually quite simple. Each batch makes a few dozen and if I want my clothes to fit, I can’t eat that many cookies within the span of a few days. It’s also really hard to resist eating cookies or sweets when they’re sitting on the counter, waiting to be eaten.
Lo and behold, Chatelaine magazine solved this problem for all of us. They took their Ultimate Chocolate Chip Cookie recipe and reduced it over and over again until it became a recipe for just two chocolate chip cookies. The recipe is delicious and the concept is genius, but I wanted to take the idea one step further. Why not take those two cookies and turn them into a single chocolate chip cookie ice cream sandwich? Look who’s brilliant now, Chatelaine!
Single Serving Chocolate Chip Cookie Ice Cream Sandwich Recipe
Ingredients:
Ice Cream (any flavour, but I think Vanilla is best)
Sprinkles or chocolate chips for garnish
Directions:
Bake cookies – This part is simple – just make sure divide the cookie batter evenly.
Cool your cookies – The cookies need to cool for just a few minutes, so you’re able to handle them. You want to let them sit for about 5-10 minutes (if you can wait that long)!
Get your ice cream out of the freezer – You need to make sure that you’re not working with melted ice cream, or your sandwich will be a sticky mess.
Scoop the ice cream onto one of the cookies – Once you have the desired amount of ice cream on the cookie, top it with the other one.
Add your sprinkles – This is a little bit messy, so make sure to do this over a plate, or you’ll have sprinkles all over the floor. I find it’s easiest to use your hands and sprinkle the sprinkles (ha!) onto the exposed ice cream.
Eat and enjoy your ice cream sandwich!

I totally agree that homemade is the best. It just taste so fresh and the flavors are so much better! I can’t believe there is a recipe that can make only 2 cookies. So convenient because it won’t tempt me to have more haha. That cookie sandwich looks so delicious! Definitely perfect for today!

Seriously, I just can’t believe I’d never thought of cutting a recipe down to a single serving like that. Sometimes, you just need one or two cookies to fill that craving!

This is all wrong. The way to keep from eating all the cookies is to use leftovers to bribe your coworkers 😉
Or…to freeze the leftover cookie balls and uh…eat them straight from the freezer instead of ever baking them like you planned.
